Ruth M. "Pie Lady" Mundy Knott-Ross, 85 of Garden Prairie, IL died suddenly Sunday, May 24, 2015 at Swedish American Hospital in Rockford. Ruth was born June 29, 1929 in Belvidere, IL, daughter of Roy and Mary (Hale) Mundy. She graduated from Belvidere High School. Ruth married Clarence E. "Clem" Knott on April 17, 1949 in Poplar Grove, IL. He preceded her in death on November 28, 1989. Ruth went on to marry Lloyd "Ole" Ross, he also preceded her in death. She was a faithful member of Garden Prairie United Church of Christ, where she taught as a Sunday school teacher. Ruth was a part of the Afternoon circle and helped found the Senior Potluck at Garden Prairie United Church of Christ. She enjoyed being part of the Belvidere Woman's Club and The Keenage Center. Ruth was a very active member of the Garden Prairie Improvement Association. Ruth was well known for her unshakeable faith; she had an amazing love for children, always taking in someone in need. She was the rock of the family and her family's port of safety and strength. Ruth was an accomplished pie baker, as would be testified by anyone who indulged in pie at many restaurants in Belvidere.

Heaven gained an exceptional angel who will be missed by her children, Leslie (Drew) Lindsay, Rick (Jill) Knott, Mike (Bev) Knott, Kathy (Steve) McKnight, Ron (Matthew Olson) Knott; grandchildren, Matthew, Jamie, and Jeffrey Knott, Erin and Kevin Knott, Breanne Lindsay, Patrick, Kelsey, and Ryan McKnight; siblings, Jean (LeRoy) Mathison, Myrt Carlson, Jerry (Gladys) Mundy, Steve (Leona) Mundy, Judy (Dave) Noe; numerous nieces, nephews, and (informally) adopted children. She is preceded in death by her parents, both her husbands, Clem and Lloyd; son, Doug; brothers, John Mundy and Kenny Mundy.

Funeral Service will be held at 11:00 a.m., Monday, June 1, 2015 at Anderson Funeral and Cremation Services, 218 W. Hurlbut Ave, Belvidere, IL 61008 with Pastor Dina Lauman officiating. Visitation will be held from 4-8:00 p.m., Sunday, May 31, 2015 at the funeral home and again from 10:00 a.m., Monday until the time of service.
